how to tell if its a hemi w/o taking parts off

How can you tell if an engine is a hemi without tearing into it. there is an engine siting in my buddys field on a frame, it has the plug wires down the middle of the engine, the flat heads also had that but those did not have a valve cover right? so are there any other engines that have that plug set up that are in the middle of the combustion chamber. thanks

If the sparks plugs are down in the middle of the valve covers and it's not a flathead (which you appear to be familiar with) then it's a hemi.

Go to the bottom of the home page on this site. Take your mouse and click on "Identify". A couple of nice pictures of hemi motors will appear. This should help you since a picture is worth a thousand words.
